I made this Ratatouille with Tempeh from Shape Magazine tonight. The only change I made was that I used extra firm tofu instead of tempeh because I couldn’t find it at the store.
I give this recipe a 2.5 out of 5. I didn’t really like it it considering all the good veggies in it, it really wasn’t so bad. The tofu was not very good and needed to be eaten with some other flavorful veggie on the fork with it. I won’t be making this again.
