I don’t have a picture of this Fettuccine with Mushrooms and Hazelnuts but I made it yesterday after church. I had planned on making this recipe before Capri was born but it just didn’t happen (in fact the mushrooms I had purchased for it went bad!). Although I’ve done some baking and have made a lot of sandwiches over the last month, I hadn’t really done any cooking. Friends brought us meals for a month and although I enjoy cooking it was so nice to not have to worry about making something for dinner at night.
However, I’m starting to get back into the swing of things and started meal planning again. We are eating at home more than we used to so I’m planning more meals than before. We used to almost always go out on Sundays after church, but yesterday we came home to this recipe. I’m so glad I still decided to make it because we both liked it a lot! I think I over-peppered a bit and the garlic I used was quite pungent but we still really liked this dish! It was fast, simple, and tasty – a good way to jump back into cooking!
