Pork Tenderloin with Red and Yellow Peppers

Sad picture, I know – iphone (the camera was all the way upstairs!) and I’m pretty sure it’s on there sideways but I’m feeling too lazy to turn it! Despite the photographic nightmare, this recipe was definitely a keeper! It is one of Cooking Light’s 20-minute meals (although they must be super speedy to do that in 20 minutes, but still a quick weeknight meal). It is only 215 calories per serving (if that’s something you’re into). And it was very tasty. I don’t know why I don’t cook with tenderloin more often – what a tender piece of meat! And what a fast and easy way to prepare it! I made some mashed potatoes to go with it as suggested in the magazine but didn’t take a picture because they got alittle neglected and were not the best looking potatoes one has ever set eyes on! Anway, great recipe to try out!
