Made Chicken With White Beans and Tomatoes from Reaoul Simple magazine’s January issue. Maybe one of the easiest meals I’ve ever made. Seriously, throw some beans, tomatoes, olive oil, and herbs in a pan and put some chicken thighs in there and pop them in the oven for 35 minutes – couldn’t have been easier! It was tasty, fairly healthy, and required no prep and minimal clean-up – awesome!
Sometimes I really enjoy the process of taking the time for a good meal, but during the week, this is often the kind of meal I want to be making!
