I made Indian Vegetarian Curried Fried Rice from this month’s Shape Magazine last Thursday night. I thought this was pretty good and simple. You do have to cook the rice beforehand though so that it is cold when you add it to the stir fry. Also, my green beans and carrots didn’t quite get cooked enough, so I would make sure they are tender before moving on to the next step. Otherwise, this was fast, fresh, and easy!
