Steak with Roasted Potatoes and Arugula

102_0232I got this recipe out of the September issue of Real Simple. I couldn’t find it on their website though. This was their “6-ingredient meal”. Ok, so the steak they used was a London Broil and I did not like this cut of meat, I think it would have been so much better with a flank steak. However, the potatoes were so good! So good that they night I got back from Atlanta I made them again! See below for the recipe for the potatoes!

Roasted Potatoes and Arugula
Real Simple Magazine, September 2009, pg. 230

1 1/2 lbs medium red potatoes, cut into wedges
2 T olive oil
4 garlic cloves, smashed
Kosher salt and black pepper
1 bunch of arugula, thick stems removed (about 4 cups)

Heat oven to 425 degrees. On a rimmed baking sheet, toss the potatoes, oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Roast until golden brown and tender, 35 to 40 minutes. Toss with arugula.
