Baked Chicken Meatballs with Peperonata

meatballsI think I made these two weeks ago…life’s been a little crazy! These were really easy to make and they were very tasty. They really reminded me of miniature meatloaves…I couldn’t find any ground turkey at the grocery store and was too lazy to ask them to grind it up for me, so I went with ground turkey instead. This recipe is from August’s Gourmet Magazine. I think this is one I’ll be making again! I also really enjoyed the peperonata with it – I’m still a little unsure as to how I feel about capers, but I have another recipe this week that calls for them, so I guess we’ll see!
