Spicy Chicken Peperonata with Lime and Mint Dressing

I’m so sorry I don’t have a picture of this, not just because it’s nice to have pictures on the blog, but because this was such a colorful meal! And it was soooo good! We really liked it. It was very summery and refreshing. We ate it up and all the left overs very quckly! It is from July’s Bon Appetit and is called Spicy Chicken Peperonata with Lime and Mint Dressing. I think it’s a pretty easy recipe to make (I don’t actually know because Jeremy was the one who made it for us!). There are two options, 1) to put it on top of polenta, 2) put it in a corn tortilla with avocado and sour creme – we went with the second option since I already had tortillas and avocados and it was so good! Kind of like a twist on chicken fajitas. And the chicken turned out so tender and moist (always a feat with chicken breasts in my mind) – delicious! You should totally make this recipe – and if you’re thinking the lime and mint dressing sounds too adventurous – you’re wrong! it’s what makes it taste like summer!
