Spicy Black Beans with Chorizo and Chipotle Cream

spicy black beansI made this meal on Sunday night. It looked good, inexpensive,a nd simple. Well, I don’t think I’ll make it again – it was inexpensive anf pretty simple…it tasted ok but it lacked a little flavor and I don’t think I cooked my beans long enough (even though they soaked an extra 24 hours and boiled an extra 30 minutes). However, I’m still eating the leftovers, but not one of my favorite meals – it happens…and as it turns out Jeremy informed me he doesn’t really like black beans – who knew!
