Tortilla Chicken Drumsticks and Roasted Potato Wedges with Cilantro-Lime Mayonnaise

Jeremy was actually the one to make this recipe (and to take the picture – he even made a separate plate of food after we ate to take this picture…which my brother ended up eating).  Even though I did not participate in making this recipe (except for the cilantro lime Mayonnaise), it seems like it’s pretty simple. Because of the tortilla chips on the chicken it has a definite tex-mex flavor, along with the cilantro lime mayonnaise. It was inexpensive, relatively easy, and we had lots of yummy leftovers – I heartily suggest it!
