Fresh Grilled Peach and Mozzarella Bruschetta with Basil

Beth and I went to our June culinary class at Whole Foods last week. So much fun! The menu: Fresh Peach and Mozzarella Bruschetta with Basil, Penne with Roasted Red Bell Pepper Pesto and Grilled Chicken, and Chocolate Mocha Ricotta Cake. So good! The very next day I just had to make the Peach Bruschetta. It was so great!

Fresh Grilled Peach and Mozzarella Bruschetta with Basil

Serves 5

Ingredients:
4-5 peaches (firm, not too ripe)
1 lb fresh mozzarella, diced
1 bunch fresh basil, sliced
Olive oil to taste
Salt and pepper to taste
Sliced baguette (optional)

Method:
Cut peaches in half and remove pit. Heat grill to medium. Toss peach halves in olive oil, salt and pepper. Place flat side down on grill for 30 seconds then turn peach at a 45 degree angle for an additional 30 seconds. Remove from grill let cool. Dice peach once it has cooled. Add all ingredients to large bowl and toss. Served with grilled bread (optional; brush baguette with olive oil and grill)

*Variations: 1.) melt the mozzarella onto the baguette 2.) replace the basil with cilantro to give it a Latin flare 3.) replace the basil with mint and add a little peach juice to make it more of a dessert.

  3. congrats on the honor of being amanda’s site of the month! (which is how i got here)

    this recipe (and the other stuff you got to taste) looks wonderful!! i’m going to have to try it.

    how often do you girls go for one of the lunchtime classes? i enjoy taking classes there and i’ve always wanted to go for the lunch ones but can’t during the school-year cause of time and distance. i’ll have to look up the classes to see what i can get in before next year begins. =)

    Lissie, thanks for visiting! Beth and I go to these classes about once a month. We actually just went to one yesterday. We’re planning on going to one on August 20th and I think Beth might be going to another one earlier in August.
